3 Recipes With Clams

Clam recipes # 1: with artichokes and squid

Prepared clams

For this dish, very simple and suitable for coeliacs, the following ingredients are needed (4 people):

  • 12 artichokes
  • 400 g of small squid
  • 400 grams of clams
  • 2 onions
  • 1 clove garlic
  • flour
  • Half lemon
  • chopped parsley
  • Salt
  • olive oil

How do we prepare it?

First of all, you should clean the artichokes well, removing the outer leaves. Afterwards, a little lemon juice is added to them. Next, you have to cook them with salt to taste and a spoonful of flour for about 12 minutes, depending on the type of artichokes you have.

When they are cooked, drain them and save the leftover broth. Then, add a little olive oil to a frying pan to sauté the previously chopped onion. Add a tablespoon of flour.

Once finished, sauté and add 4 ladles of the broth and then add the clams so that they open. You can add chopped parsley for seasoning. On the other hand, in another pan, sauté the well cleaned and seasoned squid, adding a whole clove of garlic. Finally, when everything is well cooked, mix them with the previous preparation.

Clam recipes # 2: quinoa soup with clams

For four people, the following ingredients are needed:

  • 200 grams of quinoa
  • 1/2 kg of clams
  • 2 carrots
  • 3 artichokes
  • 1 tomato
  • One onion
  • 1 glass of white wine
  • Olive oil
  • Salt
  • Parsley
  • Green onion
  • Optional: seaweed

How do we prepare it?

  1. Chop the carrots and onion and sauté with a little oil.
  2. Clean the artichokes, chop them and add them to the casserole.
  3. Add the grated tomato and chopped parsley.
  4. Wash the quinoa and put it in a pan without oil and then add it to the soup.
  5. Season and add the seaweed.
  6. Put the clams in a pan with the white wine.
  7. Cover and cook for a minute, until they open.
  8. Mix all the ingredients and cook for about 15 minutes.
  9. Serve in a deep dish seasoned with chopped green onion and a little oil to taste.

Clam recipes # 3: Swiss chard with clams and green sauce

Clam soup

It is a very nutritious and complete dish, for which the following ingredients are required:

  • 20 clams
  • 6 chard
  • 4 eggs
  • 2 cloves of garlic
  • 100 ml of white wine
  • 1 tablespoon of flour
  • 100 ml of water
  • Parsley
  • Salt
  • Olive oil

How do we prepare it?

First, separate the stalks from the chard, cut into sticks and cook for 10 minutes. Then drain them and set them aside. Also make the canes leaves and cook them for about 3 minutes. Drain again and reserve.

To prepare the sauce, peel and chop the garlic, drowning in oil and adding the flour. Then let it cook a bit and pour in the wine and water. Then add the chopped parsley. Once you have completed these steps, add the clams and stalk sticks. Replace the lid and let it concinate for about 3 minutes until the clams open.

Finally, for the omelettes, the eggs are each one separately, where the chard leaves are distributed in equal quantities. Then, place the leaves on top and decorate with sprigs of parsley.
