The charlota or lemon carlota, is a cake of French origin. Although both the way it is made and its main ingredients have changed, the preparation base remains the same. The lemon carlota is a dessert that is served cold.

It is made by lining a high-edged mold with soletilla or Genovese sponge cakes, to mold the outer line of the cake and give it its classic look.

The filling consists of a pastry cream with or without fruit. The lemon carlota is left in the refrigerator for several hours and as we have already said, it is consumed cold. In current recipes the cream of the filling can be substituted for a mousse .

Lemon Charlotte Recipe

Although it may seem a bit difficult to do, it is a matter of practice that it looks perfect. You should have some utensils in your kitchen such as a juicer, can opener, blender or electric rods, cake tin and a spatula.

The approximate time to make this dessert is one hour, half for the preparation and half as a minimum for refrigeration.

For the preparation you need the following ingredients:

  • 8 lemons.
  • 1 can of evaporated milk.
  • ½ can of condensed milk.
  • 1 can of cream.
  • 2 packages of Maria type cookies.
  • 2 teaspoons of ground cinnamon.

Preparation of the lemon carlota

First, squeeze the lemons and pour the juice into a large bowl.  Next, pour in the evaporated milk, the cream and the condensed milk. Mix well with the electric rods or better with the blender. Keep stirring until you get a thick cream.

Then make the layers of the carlota. In the mold make a base of Maria cookies and ,  on them, spread a little of the cream. Lay out a second layer of cookies and add more cream again. Continue like this until finished, trying to make the last layer cream.

Put it in the freezer for at least 30 minutes so it sets well. After that time, it is enough to keep it in the fridge. Remember that it is a dessert that is eaten cold. Before serving, sprinkle with cinnamon powder to taste, decorating as you like.

If you want to serve in individual molds, you can decorate the plate with the dried peels of the  lemons  arranged on the sides as if they were flowers.

You can serve this delicious dessert with a fruit smoothie or an orange juice or perhaps a lemonade.

Lemon carlota recipe with peaches

This cold dessert is ideal for hot summer days. For that reason, now we give you a recipe for lemon carlota, which has as an ingredient a summer fruit such as peach.

In this case the ingredients you need are:

  • 1 can of condensed milk.
  • 10 lemons.
  • 1 can of evaporated milk.
  • 2 packages of Maria cookies.
  • 1 can of peaches in syrup.

Form of elaboration

The first thing you have to do is squeeze the juice from the lemons and put it in a container. Then add the evaporated milk and the condensed milk to the lemon juice, and beat the mixture.

In a deep round mold, make a maria biscuit base. Next, layer the mixture on top of the cookie base. Then, layer the peaches that you have previously cut into cubes or slices.

Continue repeating the different layers successively  until you finish with the ingredients. The last layer should be peaches. To continue, put the cake in the refrigerator for at least half an hour and you’re done.

As a complement, you can accompany the lemon carlotta with the right drink to enhance its flavor. There are different types of drinks that go very well with certain desserts, the choice should be based on the level of sweet, acid or salty touches that it may have.
