Traditional blinis recipe

Before experimenting with a smoked blinis recipe, it is important to learn its original preparation; in some cases, it includes variants to suit the filling. For example, including 45 g of sugar in this base recipe will give us a sweeter blinis.

Ingredients

  • 1 egg
  • 1 cup of wheat flour (120 g)
  • 2 tablespoons of melted butter (40 g)
  • ¾ cup of whole milk (187 ml)
  • ½ sachet of baking powder (10 g)
  • a pinch of salt

Elaboration

  • First, in a blender, mix the egg, melted butter and milk until a homogeneous mixture is obtained and reserve.
  • Then sift the flour and yeast into another container, so that no lumps form in the subsequent cooking. Also, add a pinch of salt and sugar if desired.
  • Next, add the egg mixture to the flour and combine everything using the whisk.
  • Then let the mixture rest for an hour in the fridge.
  • Heat a frying pan greased with olive oil. Pour a portion of the mixture with the help of a ladle.
  • Then cook until both parts are browned, turning being careful not to break the blinis.
  • Finally, remove from the heat and serve.

Smoked blinis recipe with tartar sauce

For a more delicate flavor, whole milk can be substituted for plain or flavored yogurt. If a canapé blinis is desired, a small spoon should be used as a measure for the mixture.

Smoked blinis

For the blinis (25 units)

Ingredients

  • 1 egg
  • 1 natural yogurt (125 g)
  • ½ sachet of baking powder (10 g)
  • 1 cup of wheat flour (120 g)
  • Salt
  • ½ tablespoon of oil (7 g)
  • Smoked salmon

Elaboration

  • To start, with the help of a mixer, mix the egg, yogurt, flour and yeast. Add a pinch of salt and beat until smooth and creamy.
  • Then add the oil in a frying pan and heat over medium heat.
  • Then pour a portion of the mixture, according to the desired blini size.
  • Let brown on both sides. Remove from heat and wait for it to cool.
  • Finally, when serving, place a piece of smoked salmon on the blinis and bathe with the tartar sauce.

For the tartar sauce

Ingredients

  • 1 cup of mayonnaise (200 g)
  • ¼ cup pickled gherkins (50 g)
  • ¼ cup capers (50 g)
  • 2 tablespoons of chopped onion (30 g)
  • 1 tablespoon of mustard (15 g)
  • 1 tablespoon of finely chopped parsley (10 g)
  • Juice of ½ lemon

Elaboration

  • First, drain the capers and pickles and cut them into very small pieces together with the onion.
  • Then, in a blender glass, add the previous mince, mayonnaise, mustard, parsley and lemon juice.
  • Then beat until emulsified and achieve a homogeneous and creamy texture.

Smoked blinis with smoked cod and dill sauce

Ingredients

  • 1 egg
  • ½ cup of flour (60 g)
  • 1 cup of whole milk (250 ml)
  • 3 tablespoons of oil (45 ml)
  • 1 teaspoon of sugar (5 g)
  • 1 teaspoon of baking powder (5 g)
  • Salt
  • Smoked cod (to taste)

Elaboration

  • First, in a blender, mix the egg, sugar and a pinch of salt. Add the oil.
  • Then add the sifted flour, together with the yeast. Also, add the milk and beat until smooth.
  • Then, rest the mixture for 30 minutes. Pour in small portions over a hot pan until golden brown on both sides.
  • Finally, serve at room temperature, with a piece of cod on top and bathe with the sauce.

Ingredients

  • 1 cup of cream (250 g)
  • 2 tablespoons of lemon juice (30 ml)
  • 1 tablespoon of white wine (15 ml)
  • 4 tablespoons of finely chopped fresh dill (40 g)

Elaboration

  • To start, divide the cream into two half cups. Then add a few drops of lemon to one of them.
  • Then, in a blender glass, incorporate all the ingredients and beat until you get a creamy mixture.
