  • 1/3 cup of soy sauce (80 mL).
  • 1/4 teaspoon of black pepper (2 g).

Preparation

  • To prepare this delicious recipe, we will start with the first thing: prepare a mixture with the oil, honey, soy sauce and pepper in a small bowl. We will mix these ingredients well to get a homogeneous sauce. On the other hand, we will cut the chicken into cubes with an approximate size of 2 centimeters.
  • We will add the dice in a bowl together with the onion and the pepper cut into pieces of the same size as the chicken. On this mixture we will add the previous sauce and let everything macerate for about two hours in the refrigerator. This will allow the chicken and vegetables to absorb the flavor of the sauce well.
  • After this time, we take the bowl out of the refrigerator and, we will remove the dice and the vegetables with some long wooden sticks, we prick the chicken dice and the vegetable pieces alternately and we pass them through a hot griddle with a drizzle of oil to greater.
  • We will turn them several times to ensure that they cook well. At this point, it will be important to seal each die quickly. In this way, we will prevent the water inside from evaporating while we cook them on the grill, and that they are too dry.
  • The previous marinade can be discarded, but, to take advantage of it one last time, we can add a few tablespoons of this sauce on the skewers while they are on the grill, so that they absorb even more flavor. In this way, and with the dice and the vegetables well cooked, we will prepare the chicken skewers.

This recipe is usually presented in many bars in Andalusia, which is why it is a very common tapa there. In this region, they are not only prepared with chicken, but can also be found made with pork or lamb. To prepare them, we will need the following ingredients:

  • 2 cloves of garlic (6 g).
  • 5 strands of saffron (1 g).
  • 4 chicken breasts (400 g).
  • 1/2 tablespoon of oregano (3 g).
  • 3 balls of black pepper (1 g).
  • 1/4 of tablespoon of cumin (3 g).
  • 1/2 cup of white wine (120 mL).
  • 1 tablespoon of olive oil (10 mL).
  • 1/2 tablespoon of sweet paprika (5 g).

Preparation

  • To make this delicious recipe, we start by crushing the garlic cloves in a mortar together with the pepper balls.
  • To this mixture we add all the spices and seasonings, and we continue mixing and mashing until we get a paste. Once achieved, we add the tablespoon of oil and wine, and stir to get a well integrated and homogeneous sauce.
  • On the other hand, we cut the chicken into dice with a size of 2 or 3 centimeters. We put these dice in a bowl or a bag with a hermetic seal together with the previous sauce, and leave it to marinate for about 24 hours in the fridge. This way we will get the chicken to absorb the delicious flavor of the sauce well.
  • After that time, we remove the dice from the bag and prick them into long toothpicks, placing several dice on each toothpick. Next, we can choose one of two ways to cook them. The traditional method consists of passing the skewers through a very hot griddle with a drizzle of olive oil, for about 10 minutes.
  • On the other hand, we can bake the chicken skewers at 180ÂșC for about 20 minutes. Both cases will provide us with a delicious dish, but if you want to follow the classic recipe of this typical southern tapa, it is advisable to follow the first option.
