Step by Step

  1. To start the recipe you have to put the sugar in a non-stick pan with the water and lemon juice. This is used to prepare the caramel. You can also buy elaborate, but doing it has no difficulty.
  2. Leave a few minutes while it acquires color and consistency. When it is on point, pour into the bottom of the mold or individual molds.
  3. Then prepare the fruit. Wash, peel and mash the peaches.
  4. Put the fruit puree on top of the caramel in the molds. Reserve 2 tablespoons for the rest of the preparation.
  5. As a last step, cook the flan itself. Beat the eggs well and when they are ready add the milk and condensed milk. Mix these 3 ingredients well and then add the reserved peach.
  6. Fill the mold with the liquid and cook in a bain-marie in the oven at 180 degrees Celsius. About 30 minutes is enough.  
  7. Once cool, remove from the mold and serve with a little whipped cream or chopped fresh fruit.

If it is not the season for fresh peaches or they are not on hand, they can be substituted for peach in syrup. The result is the same with the added sweetness of the sugar that the latter contain.

For the flan you need the following:

  • 3 peaches.
  • 250 milliliters of unsweetened almond drink.
  • 3 dates.
  • 1 tablespoon of ground almonds.
  • 2 tablespoons of cornstarch.
  • 1/2 teaspoon ground cinnamon.

To decorate the dessert:

  • Peach or other fruit jam. You can use a store bought or some homemade version.
  • Almond in granite.
  • Agave syrup.
  • Cinnamon powder.
  • Fresh mint leaves.

How to make it

  1. First, wash, peel and slice the peaches. A vegetable peeler can be used to waste less fruit. Chop the dates and remove the pit.
  2. Put 200 milliliters of almond drink to heat in a saucepan and reserve the other 50. Add the peach and dates and cook until they have a soft texture.
  3. Then blend well with a mixer or food processor. Then add the ground almonds and ground cinnamon, integrate all the elements and leave on low heat.
  4. Mix the cornstarch with the remaining almond drink. Once dissolved, pour into the saucepan with the rest of the preparation and stir without stopping. Let it cook until the texture is thick.
  5. At this time fill the individual flan molds. Cupcakes or muffins are also valid . Let it warm, cover with plastic wrap and place in the fridge. Keep them cold for a whole day.
  6. At the moment of serving, unmold the flan carefully. It can be garnished with a little jam or agave syrup on top to replace the caramel.
