Pineapple fried rice

Pineapple fried rice is also called  Khao Pad Saparod.  It is a variety of fried rice that uses, in addition to a rich variety of vegetables , pineapple to give that special and different touch.

The mixture of flavors that this rice offers makes it a very complete dish, full of surprises and nuances that will make you look like an expert on any occasion. And the best thing is that it is easy to prepare.

Ingredients

  • 150 g pineapple
  • 10 peeled prawns
  • 1 tablespoon of soy sauce (15 ml)
  • 10g butter
  • 120 g chicken
  • ½ onion
  • 1 tablespoon of sugar (15 g)
  • 2 large eggs
  • 1 tablespoon of salt (15 g)
  • 320 g of rice
  • 1 tablespoon of curry powder (15 g)
  • 1 tablespoon of white pepper (15 g)
  • 50 g of fried cashews
  • 1 tomato
  • 1 chives or chives

Preparation

  • To start with your recipe, prepare the ingredients so that you can integrate them later.
  • Put the rice to cook in a pot.  Remember that for it to look good you must add two cups of water for each cup of rice. Add a little salt and a splash of oil, stir and let it dry.
  • Cut and reserve the tomato and pineapple in small cubes in separate containers.
  • Chop the onion and chives finely and reserve the onion in a little water with lemon juice. The chives leave it in a container where it remains fresh.
  • Put a splash of vegetable oil in a frying pan and fry the prawns.  When they’re done, remove them from the pan and set them aside for later use, but don’t remove the pan from the heat.
  • In the same pan, melt the butter and fry the chicken. Brown it on all sides.
  • Then pour in the two eggs and mix them with the chicken.
  • Proceed to incorporate the curry and the cooked rice. Stir until all the ingredients are well integrated.
  • Then  add the soy sauce, the cashews, the tomato, the onion, the white pepper, the salt and the sugar. Stir again until everything is well mixed.
  • Add the pineapple and the fried prawns, stir and let everything cook for a few minutes.
  • To finish, add the chives, mix it with the other ingredients and remove the pan from the heat.
  • Before serving, let the ingredients rest for a few moments, so the flavors will better settle.
  • To serve, we recommend emptying half a pineapple and using the content to make a juice. Use the skin of the pineapple that you have emptied to serve your rice, it will give it a very tropical touch.

Additional tips

  • Remember that the prawns should be cleaned properly, especially remove the intestine. If you do not know how to do it, it is best to buy some that are already peeled.
  • If you don’t like the feeling of very raw pineapple, we suggest you fry it first, before adding it to the other ingredients.
  • In order not to overdo the salt, do not add too much when you prepare the rice.  Use only the amount necessary so that it is not too simple. Remember that several of the ingredients, such as soy sauce, are rich in salt, so it is best not to risk it.
  • To accompany this dish you can use half a pineapple to make a delicious juice. It will be refreshing and will highlight this ingredient in the dish.
  • One trick we give you is to let the curry toast a little before adding the rice so that it releases all its aroma.
  • You can decorate the rice by putting a few cashews on top, and  then sprinkle with chopped chives and raisins.
