  • Orange peel.
  • 1 teaspoon of vanilla essence (5 milliliters).
  • 5 tablespoons of sugar (50 grams).
  • 3 cups of pastry flour (300 grams).
  • ½ tablespoon of salt.
  • 1 stick of unsalted butter (100 grams)

For the filling:

  • Salt (1 grams).
  • Unsalted butter (85 grams).
  • Dark chocolate (80 grams).
  • 4 and a half tablespoons of icing sugar (45 grams).
  • 1 tablespoon of defatted cocoa powder (10 grams).

For the syrup:

  • 2 tablespoons of sugar (20 grams) and 2 of water (20 milliliters).

Chocolate Babka Preparation

The first thing we have to do is take a saucepan and put it on the fire. In it we will pour the milk, preferably whole to take advantage of the flavor that the fat provides. When it reaches the boiling point, it is necessary to turn off the heat and cover the saucepan, until it reaches a temperature of approximately 40ºC.

At this time it is necessary to separate 125 milliliters of the milk that has been boiled and reserve it. At the same time, you have to take a bowl-type container and add the yeast to it. Milk is poured on top and stirred until the yeast dissolves completely. At this time, the flour comes into play, stirring the mixture again. Once a homogeneous paste is obtained, it will be necessary to wait 30 minutes for the yeast to take effect.
